Method

Preparing the Sushi Rice

Cook the Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season the Rice

Once cooked, transfer the rice to a large bowl. In a separate bowl, mix rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold to combine. Allow to cool to room temperature.

Assembling the Sushi

Prepare Fillings

Slice the avocado and jalapeño into thin strips. Set aside.

Prepare the Nori

Lay a nori sheet on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.

Add Fillings

Place a line of crispy prawns, avocado, and jalapeño in the center of the rice. Roll the sushi tightly using the mat.

Finishing Touches

Torch the Sushi

Using a kitchen torch, lightly scorch the top of the sushi roll to achieve an aburi-style finish.

Prepare the Dashi Mayo

In a bowl, mix mayonnaise and dashi stock until smooth. Drizzle over the top of the sushi.

Add Sauces

Drizzle sweet soy sauce and hot aioli over the sushi roll. Sprinkle with black sesame seeds.
