Method
Making the Bao Buns
Prepare the Dough
In a large mixing bowl, combine the flour, instant yeast, sugar, baking powder, and salt. Gradually add warm water and knead until a smooth dough forms. Cover and let rise in a warm place for about 1 hour.
Shape and Steam
After the dough has risen, divide it into small balls. Flatten each ball into a round disc. Place on parchment paper squares and steam for 10-15 minutes until fluffy.
Preparing the Crispy Chicken
Coat the Chicken
Cut the chicken thighs into strips. Season with salt and black pepper. Dredge the chicken in flour, dip in beaten egg, and coat with panko breadcrumbs.
Fry the Chicken
In a deep skillet, heat vegetable oil over medium-high heat. Fry the chicken strips until golden brown and crispy, about 5-7 minutes. Drain on paper towels.
Assembling the Bao Buns
Prepare the Slaw
In a bowl, combine shredded cabbage, carrot, green onions, rice vinegar, soy sauce, and sesame oil. Toss together and set aside.
Assemble the Buns
Take a steamed bao bun, add crispy chicken, a handful of Asian slaw, sliced cucumbers, drizzle with sweet chili hoisin sauce and hot aioli. Top with sesame seeds and micro cilantro.
