Preparation of Chicken
Marinate Chicken
In a bowl, combine buttermilk, salt, pepper, and garlic powder. Add chicken breasts and marinate for at least 30 minutes.
Prepare Breading
In a separate bowl, mix flour and cornstarch. Beat the egg in another bowl.
Bread Chicken
Remove chicken from marinade, dip into the egg, then coat in the flour mixture.
Frying Chicken
Heat Oil
In a deep pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry Chicken
Carefully add chicken to the hot oil and fry for 6-8 minutes until golden brown and cooked through. Remove and drain on paper towels.
Making Korean Sauce
Combine Sauce Ingredients
In a small bowl, mix gochujang, soy sauce, honey, rice vinegar, and sesame oil until well combined.
Coat Chicken
Toss the fried chicken in the Korean hot sauce until evenly coated.
Assembly
Assemble the Sandwich
On the bottom half of a brioche bun, place the crispy chicken. Top with a slice of white cheddar, sweet pickles, and creamy coleslaw. Cover with the top half of the bun.
