Marinate the Pork
In a bowl, combine olive oil, minced garlic, lemon juice, lemon zest, salt, and black pepper. Mix well to create a marinade. Place the pork loin in a resealable plastic bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

Preheat the Grill
Preheat your grill to medium-high heat.

Grill the Pork
Remove the pork from the marinade and let any excess marinade drip off. Place the pork on the grill and cook for about 6-8 minutes on each side, or until the internal temperature reaches 145°F (63°C).

Rest and Slice
Once cooked, remove the pork from the grill and let it rest for about 5 minutes. Then slice the pork into medallions.

Serve the sliced pork garnished with fresh parsley and lemon slices.
