Cooking Instructions

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 2

    Prepare the Flaxseed Mixture

In a small bowl, mix the flaxseed meal with 6 tablespoons of water. Let it sit for about 5 minutes to thicken.

  3. 3

    Sauté Aromatics

In a skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.

  4. 4

    Combine Ingredients

In a large bowl, combine the black beans (rinsed and drained), mashed sweet potato, cooked quinoa, grated carrot, oats, cumin, paprika, salt, black pepper, and the flaxseed mixture. Mix well until fully combined.

  5. 5

    Shape the Loaf

Transfer the mixture to a loaf pan and press it down firmly to hold its shape.

  6. 6

    Bake the Loaf

Bake in the preheated oven for 45-50 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

  7. 7

    Cool and Serve

Remove from the oven and let the loaf cool in the pan for about 10 minutes before transferring to a wire rack. Slice and serve warm.
