In a large skillet or tagine, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add Garlic and Bell Pepper
Stir in the minced garlic and chopped red bell pepper. Cook for another 3-4 minutes, until the bell pepper softens.

Incorporate Spices
Add the ground cumin, ground coriander, and paprika to the skillet. Stir well to coat the vegetables and cook for 1-2 minutes until fragrant.

Add Tomatoes
Pour in the canned diced tomatoes along with their juices. Bring the mixture to a simmer, allowing it to cook for about 10 minutes.

Add the shrimp to the skillet, stirring gently to combine. Cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.
