Bake the Potatoes

Preheat your oven to 400°F (200°C). Scrub the Russet potatoes and poke a few holes in each with a fork. Bake directly on the oven rack for about 45-60 minutes or until tender.

Prepare the Filling

Once the potatoes are done, let them cool slightly. Cut each potato in half lengthwise and scoop out the insides into a mixing bowl, leaving a little potato flesh around the skin.

Mix the Ingredients

To the bowl with potato flesh, add butter, sour cream, half of the cheddar cheese, green onions, bacon, salt, black pepper, and paprika. Mash until well combined and creamy.

Stuff the Potatoes

Spoon the potato mixture back into the potato skins. Top each potato with the remaining cheddar cheese.

Place the stuffed potatoes back in the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
