    Prepare the Ingredients

    Clean the portobello mushrooms and chop them into bite-sized pieces. Chop the onion and mince the garlic.

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute.

    Cook the Mushrooms

    Add the chopped portobello mushrooms to the pot and cook for about 10 minutes, stirring occasionally until they are softened.

    Add Broth and Seasonings

    Pour in the vegetable broth, add thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

    Blend the Soup (Optional)

    If you prefer a creamier soup, use an immersion blender to blend the soup to your desired consistency. Alternatively, transfer to a blender in batches.

    Finish with Cream (Optional)

    Stir in heavy cream if desired and heat through for an additional 5 minutes. Adjust seasoning as needed.
