1. Sauté Vegetables
In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.
2. Add Tomatoes and Broth
Add the canned tomatoes (with juices) and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes.
3. Blend the Soup
Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
4. Add Basil and Season
Stir in the chopped basil, salt, and black pepper. If desired, add heavy cream for a richer flavor. Heat through for another 5 minutes.
