Grilled Salmon

Prepare the Marinade

In a small bowl, mix olive oil, lemon juice, salt, and black pepper. Brush the mixture onto the salmon filet.

Grill the Salmon

Preheat the grill to medium-high heat. Place the salmon skin-side down on the grill and cook for about 5-6 minutes on each side, or until the salmon flakes easily with a fork.

Three Pepper Slaw

Mix the Slaw

In a large bowl, combine the red, yellow, and green bell peppers, cabbage, and grated carrot.

Prepare the Dressing

In a small bowl, whisk together rice vinegar, honey, salt, and black pepper. Pour over the vegetable mixture and toss to coat.

Mango Relish

Combine Ingredients

In a mixing bowl, combine the diced mango, red onion, cilantro, lime juice, and salt. Mix well and set aside.

Caesar Salad

Assemble the Salad

In a large bowl, combine chopped romaine lettuce, Caesar dressing, grated Parmesan cheese, and croutons. Toss to combine.

Serve

On a plate, serve the grilled salmon filet topped with three pepper slaw and mango relish, alongside a portion of Caesar salad.
