Prepare the Slaw
In a large bowl, combine the shredded cabbage, red bell pepper, yellow bell pepper, and carrots. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, and sugar. Pour the dressing over the slaw and toss to combine. Set aside in the refrigerator to chill.
Marinate the Catfish
Place the catfish fillets in a shallow dish and cover with buttermilk. Let them marinate for at least 30 minutes.
Prepare the Coating
In a shallow dish, mix together the cornmeal, flour, paprika, garlic powder, salt, and black pepper.
Coat the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are well coated.
Fry the Catfish
In a large skillet, heat the oil over medium-high heat. Once hot, carefully add the coated catfish fillets. Fry for about 4-5 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.
Cook the French Fries
While the catfish is frying, prepare the French fries according to package instructions. Serve alongside the catfish.
