Prepare the Chicken
Preheat the oven to 350°F (175°C). Season the chicken breasts with olive oil, garlic powder, salt, and black pepper.
Cook the Chicken
In a skillet over medium heat, cook the seasoned chicken breasts for about 5-7 minutes on each side until golden brown and cooked through. Remove from heat and let cool slightly before slicing.
Mix the Sauce
In a large bowl, combine the cream of chicken soup, diced Rotel tomatoes, sliced black olives, and 1 cup of shredded cheddar cheese. Mix well.
Assemble the Casserole
In a greased 9x13 inch baking dish, layer the cooked rice at the bottom. Place the sliced chicken breasts on top of the rice. Pour the sauce mixture evenly over the chicken.
Add Cheese and Bake
Sprinkle the remaining 1 cup of shredded cheddar cheese on top of the casserole. Cover with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Serve
