Ravioli Preparation

    Make the Dough

    In a large bowl, combine the flour and salt. Make a well in the center, crack the egg into the well, and gradually incorporate the flour until a dough forms. Knead the dough for about 5-10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Filling

    In a bowl, mix the ricotta cheese, grated Parmesan cheese, and a pinch of salt until well combined. Set aside.

    Roll Out the Dough

    After resting, divide the dough into quarters. Roll out one piece at a time on a floured surface until very thin, about 1/16 inch thick.

    Form the Ravioli

    Place small spoonfuls of the ricotta mixture on one half of the rolled-out dough, spacing them about 2 inches apart. Fold the other half of the dough over the filling and press down around each mound to seal. Cut out the ravioli using a knife or a pasta cutter.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Gently add the ravioli and cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

    Prepare the Sauce

    In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant. Add crushed tomatoes, salt, and pepper. Simmer for 10 minutes.

    Combine and Serve

    Add the cooked ravioli to the sauce and gently toss to coat. Serve hot with additional Parmesan cheese on top.
