Prepare the Chicken

Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and black pepper, then add them to the skillet, skin side down. Sear until golden brown, about 5-7 minutes per side. Remove the chicken and set aside.

Sauté the Peppers and Garlic

In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced red and yellow bell peppers, and hot peppers. Cook for 5-6 minutes until softened.

Combine and Simmer

Return the seared chicken to the skillet and pour in the chicken broth. Bring to a simmer, cover, and cook for about 25-30 minutes or until the chicken is fully cooked and tender.

Garnish and Serve

Once cooked, remove from heat and sprinkle with fresh chopped parsley. Serve hot with your choice of side dishes.
