Method
Cavatelli Preparation

Make the Dough
In a large bowl, combine all-purpose flour, semolina flour, and salt. Make a well in the center and add the egg and water. Mix until a dough forms.

Knead and Shape
Knead the dough on a floured surface for about 5-7 minutes until smooth. Divide dough into small pieces and roll into logs, then cut into small pieces and shape into cavatelli.

Cook Cavatelli
Boil salted water in a large pot. Cook cavatelli for about 3-5 minutes until they float. Drain and set aside.
Broccoli Rabe & Sausage Preparation

Cook Sausage
In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it apart as it cooks.

Add Broccoli Rabe
Add minced garlic, red pepper flakes, and chopped broccoli rabe to the skillet. Sauté until broccoli is tender and vibrant.

Combine with Cavatelli
Toss the cooked cavatelli with the sausage and broccoli rabe mixture. Season with salt and pepper to taste.
Arugula & Mushrooms in Marinara Sauce Preparation

Add Marinara Sauce
Stir in marinara sauce and bring to a simmer. Add arugula and cook until wilted.

Combine with Cavatelli
Toss the cooked cavatelli with the sauce and vegetables. Season with salt and pepper to taste.
Meat Sauce Preparation

Add Tomatoes and Seasoning
Stir in crushed tomatoes and Italian seasoning. Simmer for 20-30 minutes, stirring occasionally.

Combine with Cavatelli
Toss the cooked cavatelli with the meat sauce. Season with salt and pepper to taste.
