    Make the Linguine Dough

    In a large mixing bowl, combine flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs using a fork until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

    Roll Out the Dough

    After resting, divide the dough into 4 pieces. Roll each piece out with a pasta machine or a rolling pin to your desired thickness, then cut into linguine strips.

    Prepare the Marinara Sauce

    In a saucepan, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant. Crush the canned tomatoes and add them to the pan along with chopped basil. Simmer for 20 minutes, stirring occasionally.

    Cook the Linguine

    Bring a large pot of salted water to a boil. Add the linguine and cook for 2-3 minutes or until al dente. Drain the pasta, reserving a little pasta water.

    Combine Pasta and Sauce

    Toss the cooked linguine with the marinara sauce in the saucepan. If the sauce is too thick, add a splash of reserved pasta water to loosen it.

    Serve

    Plate the linguine and top with shaved ricotta salata. Garnish with additional fresh basil if desired.
