Make the Fettuccine
In a large bowl, mix the all-purpose flour and eggs until it forms a dough. Knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Roll Out the Dough
After resting, divide the dough into quarters. Roll each piece out on a floured surface until thin, then cut into fettuccine strips. Dust with flour to prevent sticking.

Cook the Fettuccine
Bring a large pot of salted water to a boil. Cook the fettuccine for about 3-4 minutes until al dente. Drain and set aside.

Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant. Add the shrimp and cook until pink, about 3-4 minutes.

Combine Ingredients
Add the fresh spinach to the skillet and cook until wilted. Stir in the mascarpone cheese until melted and creamy. Season with salt and black pepper.

Mix with Pasta
Toss the cooked fettuccine into the skillet with the sauce, ensuring it’s well coated. Add grated Parmesan cheese and mix well.

Plate the fettuccine al sugo toscano and garnish with additional Parmesan cheese if desired. Enjoy!
