Prepare the Ingredients
Finely chop the onion and set aside. Soak the sausage casings in water for at least 30 minutes.
Mix the Ingredients
In a large mixing bowl, combine the pork blood, pork fat (diced), oatmeal, chopped onion, salt, black pepper, thyme, and cayenne pepper. Mix thoroughly until all ingredients are well blended.
Stuff the Casings
Carefully stuff the mixture into the soaked sausage casings, making sure to leave some space for the pudding to expand. Tie the ends securely with kitchen twine.
Cook the Black Pudding
Place the stuffed sausages in a pot of simmering water (not boiling) and cook for about 30-40 minutes until firm. Remove from the water and let cool.
Slice and Serve
Once cooled, slice the black pudding into rounds and serve as desired, either hot or cold.
