Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit for 10 minutes.

Season the Rice
In a small saucepan, combine rice vinegar, sugar, and salt. Heat gently until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a wooden spatula. Allow the rice to cool to room temperature.

Slice the Salmon
Using a sharp knife, slice the Ahi salmon into thin strips, approximately 1/4 inch thick. Ensure the cuts are clean and even for presentation.

Form the Nigiri
Wet your hands with water to prevent sticking. Take a small amount of sushi rice (about the size of a golf ball) and mold it into an oval shape. Place a slice of salmon on top of the rice and gently press it down.

Serve
Arrange the nigiri on a plate. Serve with wasabi and soy sauce on the side. Optionally, you can garnish with thin strips of nori.
