    Prepare the Artichokes

    Trim the stems of the artichokes and remove the tough outer leaves. Cut off the top inch of the artichokes and use scissors to trim the sharp tips of the remaining leaves. Rinse under cold water and set aside.

    Make the Filling

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, then sauté until the onion is translucent. In a bowl, combine the sautéed onions and garlic with breadcrumbs, diced hard boiled eggs, parsley, salt, pepper, and lemon juice. Mix well.

    Stuff the Artichokes

    Gently pull apart the leaves of each artichoke and stuff the filling mixture between the leaves and into the center. Be generous with the stuffing.

    Cook the Artichokes

    Place the stuffed artichokes in a large pot with a steaming basket or directly on the bottom. Add about 2 inches of water to the pot, cover, and steam for 30-40 minutes, or until the leaves pull away easily.

    Serve

    Remove the artichokes from the pot and let them cool slightly before serving. Enjoy warm as an appetizer or side dish.
