Prepare the Veal Chops
Season the veal chops with salt, black pepper, and Italian seasoning. Set aside.

Bread the Chops
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs and grated Parmesan cheese. Dredge each chop in flour, dip into the eggs, and then coat with the breadcrumb mixture.

Cook the Chops
In a large skillet, heat olive oil over medium-high heat. Add the breaded veal chops and cook for about 4-5 minutes on each side, until golden brown and cooked through. Remove from the skillet and drain on paper towels.

Make the Bolognese Sauce
In the same skillet, add the spicy Italian sausage and cook until browned. Drain excess fat. Add tomato sauce and simmer for 10-15 minutes, mixing well.

Assemble the Dish
Preheat the oven to 375°F (190°C). Place the cooked veal chops in a baking dish, spoon the bolognese sauce over each chop, and top with shredded mozzarella cheese.

Bake in the preheated oven for about 15-20 minutes, until the cheese is melted and bubbly.

Remove from the oven, top with diced long hots, and serve immediately.
