Prepare the Shanks
Season the lamb or veal shanks with salt and black pepper on all sides.

Deglaze the Pot
Add the dry white wine to the pot, scraping up any browned bits from the bottom. Let it simmer for about 3 minutes.

Add Remaining Ingredients
Add the broth, crushed tomatoes, bay leaves, and return the shanks to the pot. Bring to a gentle simmer.

Slow Cook
Cover the pot and reduce the heat to low. Let it cook for about 2-2.5 hours, or until the meat is tender and falling off the bone.

Serve
Remove the shanks from the pot and serve with mashed potatoes. Garnish with fresh parsley.
