1. Preparing the Oven
Preheat your oven to 400°F (200°C).
2. Preparing the Sea Bass
Pat the Chilean sea bass fillets dry with a paper towel. Season both sides with salt and black pepper.
3. Making the Crust
In a mixing bowl, combine panko breadcrumbs, grated Parmesan cheese, and dried thyme. Mix well.
4. Applying Honey Mustard
Spread a generous layer of stone ground honey mustard over the top of each fillet.
5. Coating with Crust
Press the breadcrumb mixture onto the honey mustard-coated side of each fillet to create a crust.
6. Drizzling Olive Oil
Drizzle olive oil over the crusted fillets to help them brown.
7. Roasting
Place the fillets on a baking sheet lined with parchment paper. Roast in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork and the crust is golden brown.
8. Serving
