Cavatelli Preparation

Make the Cavatelli Dough
In a large bowl, combine the flour and salt. Make a well in the center, add the egg, and mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Roll and Cut the Cavatelli
After resting, divide the dough into small portions and roll each into a long rope about 1/2 inch thick. Cut the rope into 1-inch pieces. Use your thumb to roll each piece over a fork or a gnocchi board to shape the cavatelli.

Cook the Broccoli Rabe
In a large pot of boiling salted water, add the broccoli rabe and cook for 2-3 minutes until tender. Remove and shock in ice water. Once cool, chop into smaller pieces.

Cook the Sausage
In a large skillet over medium heat, add the hot Italian sausage, breaking it up with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

Prepare the Sauce
In the same skillet, add olive oil and garlic. Sauté for about 1-2 minutes until fragrant. Add the cooked sausage and broccoli rabe, along with red pepper flakes. Stir to combine.

Serve
Serve the cavatelli hot, topped with grated Parmesan cheese.
