Method
Preparation of Yucca Fries
Peel and Cut Yucca
Peel the yucca root and cut it into fry-sized pieces.
Boil Yucca
Place the cut yucca in a pot of salted water and boil for 15-20 minutes until tender. Drain and let cool.
Fry Yucca
Heat vegetable oil in a deep pan over medium heat. Once hot, fry the yucca pieces in batches until golden brown, about 5-7 minutes. Remove and drain on paper towels.
Season Yucca
Toss the fried yucca with salt, paprika, and garlic powder while still hot.
Preparation of Dipping Sauces
Make Basil Lime Aioli
In a bowl, combine mayonnaise, chopped basil, lime juice, and minced garlic. Mix well and set aside.
Make Yellow Pepper Mayo
In a separate bowl, combine mayonnaise, pureed roasted yellow bell pepper, and lemon juice. Stir until smooth.
Make Gulf Sauce
In another bowl, mix together mayonnaise, ketchup, hot sauce, and Worcestershire sauce until well combined.
