Trout and Accompaniments

Basil Lime Aioli

Method

Preparation of Aioli

  1. 1

    Make the Basil Lime Aioli

In a bowl, combine mayonnaise, chopped basil, lime juice, minced garlic, and salt. Mix well until smooth and set aside.

Trout and Sweet Potato Fries

  1. 2

    Prepare Sweet Potato Fries

Preheat the oven to 425°F (220°C). Cut sweet potatoes into fries, toss them with olive oil, salt, and pepper, and spread them on a baking sheet. Bake for 25-30 minutes or until crispy, flipping halfway through.

  2. 3

    Cook Trout

Season trout fillets with salt and pepper. Dip each fillet into gluten-free breadcrumbs, coating evenly. In a skillet, heat olive oil over medium heat. Cook the trout for 3-4 minutes on each side or until golden brown and cooked through.

Assembly

  1. 4

    Plate the Dish

On a plate, arrange the crispy trout fillets alongside sweet potato fries, peas, sliced cucumber, and pickled onions. Drizzle with basil lime aioli and top with shaved Parmesan.
