    Prepare the Rice

    Cook the rice according to package instructions. Set aside when done.

    Sauté the Vegetables

    In a large skillet, heat a tablespoon of oil over medium heat. Add minced garlic and sauté until fragrant.

    Add Mushrooms and Onions

    Add sliced portabella mushrooms and chopped red onion to the skillet. Cook for about 5-7 minutes until they start to soften.

    Incorporate Tomatoes and Aji Amarillo

    Stir in diced roma tomatoes and aji amarillo paste. Cook for another 3-4 minutes until tomatoes are soft.

    Deglaze with White Wine

    Pour in the white wine and tamari sauce. Let it simmer for about 5 minutes, allowing the flavors to meld.

    Prepare the Fries

    While the vegetable mixture is simmering, prepare the gold fries according to package instructions or fry them fresh.

    On a plate, layer the gold fries, top with the sautéed portabella mixture, and garnish with chopped cilantro. Serve alongside garlic rice.
