Method
Prepare Seafood

Prepare the Breading
In a bowl, mix the flour, cornmeal, salt, black pepper, and cayenne pepper. Set aside.

Bread the Seafood
Dip the calamari, shrimp, and Wahoo pieces in the beaten egg, then dredge them in the flour mixture until well coated.
Fry Seafood

Heat Oil
In a large pot or deep fryer, heat the oil to 350°F (175°C).

Fry the Seafood
Carefully add the breaded seafood to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
Prepare Plantain Chips

Fry Plantains
In the same or a separate pot, fry the sliced green plantains until golden and crispy, about 4-5 minutes. Remove and drain on paper towels.
Make Sauces

Prepare Basil Lime Aioli
In a bowl, combine mayonnaise, chopped basil, and lime juice. Mix well and set aside.

Prepare Yellow Pepper Mayo
In a separate bowl, mix mayonnaise and roasted yellow bell pepper puree.

Prepare Gulf Sauce
In another bowl, mix ketchup, horseradish, and lemon juice until well combined.
Serve

Plate the Dish
Arrange the crispy seafood and plantain chips on a serving platter. Serve with basil lime aioli, yellow pepper mayo, and gulf sauce on the side.
