Make the Pancake Batter
In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, mix the milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Avoid over-mixing; a few lumps are okay.
Cook the Pancakes
Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter. Pour about 1/2 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown.
Assemble the Pancakes
Stack the pancakes on a plate. Spread a generous layer of peanut butter on one pancake, top with a layer of strawberry jam, and then add another pancake on top. Drizzle with sweet cream if desired.
