Add Garlic and Broth
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant. Pour in the beef broth and add thyme and bay leaves. Bring to a boil, then reduce heat and let simmer for 20-30 minutes.
Season the Soup
Remove the bay leaves and season the soup with salt and black pepper to taste.
Prepare the Bread and Cheese
While the soup is simmering, preheat the oven to 350°F (175°C). Place the slices of French bread on a baking sheet and toast in the oven for 10 minutes until lightly golden. Remove from the oven and sprinkle the Gruyère cheese on top of each slice.
