Prepare the Stuffing
In a bowl, combine crab meat, Monterey Jack cheese, bread crumbs, green onions, mayonnaise, lemon juice, garlic powder, salt, and black pepper. Mix until all ingredients are well combined.

Prepare the Shrimp
Peel and devein the shrimp, leaving the tails intact. Make a slit along the back of each shrimp and gently open them up.

Stuff the Shrimp
Spoon the crab mixture into each shrimp and press gently to close.

Cook the Shrimp
Preheat the oven to 375°F (190°C). Place the stuffed shrimp on a baking sheet and bake for 15-20 minutes, or until the shrimp are cooked through and opaque.

Prepare the Lobster Butter Sauce
In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Stir in lobster stock and heavy cream, and let simmer for 5 minutes. Add lemon zest, salt, and pepper. Remove from heat and stir in chopped parsley.

Serve
Plate the stuffed shrimp over a bed of steamed rice and drizzle with lobster butter sauce before serving.
