Prepare the Cucumbers
Wash the cucumbers and cut them into halves or quarters lengthwise. Smash them gently with the flat side of a knife or a rolling pin to break them open, which helps them absorb the dressing better.

Make the Vinaigrette
In a small pan, dry roast the Sichuan peppercorns over medium heat until fragrant, about 2 minutes. Remove from heat and let cool. In a bowl, combine the roasted peppercorns, soy sauce, rice vinegar, sesame oil, and sugar. Mix well.

Combine Ingredients
In a large mixing bowl, add the smashed cucumbers, minced garlic, and sesame seeds. Pour the vinaigrette over the cucumbers and toss gently to combine.

Add salt and chili oil to taste, tossing again to ensure everything is well coated.
