Prepare the Ingredients

Cook the lo mein noodles according to package instructions, drain, and set aside. Prepare the shiitake mushrooms and choy sum by washing and cutting as needed. If using tofu, chicken, shrimp, or char siu pork, prepare them by cutting into bite-sized pieces.

Stir-Fry the Protein

In a large wok or skillet, heat vegetable oil over medium-high heat. Add the minced garlic and ginger, cooking for about 30 seconds until fragrant. Add your choice of protein (tofu, chicken, shrimp, or char siu pork) and stir-fry until cooked through, about 3-5 minutes.

Add Vegetables

Add the shiitake mushrooms and choy sum to the wok. Stir-fry for another 2-3 minutes until the vegetables are tender but still vibrant.

Combine Noodles

Add the cooked lo mein noodles to the wok. Pour in the soy sauce, and toss everything together until the noodles are well coated and heated through. Season with salt and pepper to taste.

Serve

Remove from heat and serve hot. Enjoy your lo mein noodles!
