    Prepare the Tofu

    Drain and press the firm tofu to remove excess moisture. Cut it into small cubes.

    Cook the Pork

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground pork and cook until browned, about 5-7 minutes. Break it apart with a spatula as it cooks.

    Add Aromatics

    Add the minced garlic and ginger to the skillet and stir-fry for about 1 minute until fragrant.

    Incorporate Tofu

    Carefully add the cubed tofu to the skillet and gently mix with the pork. Cook for an additional 3-4 minutes.

    Create the Sauce

    In a small bowl, mix together the soy sauce, chili bean paste, water, sugar, and cornstarch until well combined. Pour the sauce over the pork and tofu mixture.

    Stir-Fry

    Stir gently to coat the pork and tofu in the sauce, cooking for another 3-5 minutes until the sauce thickens. Season with salt and black pepper to taste.

    Finish and Serve

    Remove from heat, garnish with chopped green onions, and serve hot with steamed rice.
