    Prepare the Lotus Roots

    In a pot of boiling water, blanch the lotus root slices for 2-3 minutes until slightly tender. Remove and drain.

    Fry the Lotus Roots

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the lotus roots and fry until crispy and golden. Remove and set aside.

    Cook the Lap Cheung

    In the same skillet, add the sliced lap cheung and cook for 3-4 minutes until they are browned. Remove and set aside.

    Scramble the Eggs

    Add another tablespoon of oil to the skillet. Crack the eggs into the skillet and scramble until fully cooked. Remove and set aside.

    Stir-Fry the Asparagus

    Add the remaining tablespoon of oil to the skillet. Add the chopped asparagus and stir-fry for about 2-3 minutes until tender yet crisp.

    Combine Ingredients

    Add the cooked rice to the skillet with the asparagus. Stir well to combine and heat through. Add the cooked lap cheung, scrambled eggs, soy sauce, salt, and pepper. Mix well until everything is heated.

    Serve

    Transfer the fried rice to a serving dish and top with crispy lotus roots and chopped green onions. Serve hot.
