Prepare the Filling
In a skillet, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant. Add duck breast, cooking until browned. Stir in julienned carrots, shredded cabbage, bell pepper, and chopped green onions. Pour in soy sauce, and season with salt and pepper. Cook until vegetables are tender but still crisp. Remove from heat and let cool.

Assemble the Egg Rolls
Place an egg roll wrapper on a clean surface. Spoon a portion of the duck and vegetable filling into the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Repeat with remaining wrappers and filling.

Fry the Egg Rolls
In a deep frying pan, heat oil over medium-high heat. Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.

Make the Sauce
In a small bowl, mix together hoisin sauce and honey to create your dipping sauce.
