Cake and Ganache
Method
Preparation
- 1
Prepare the Chocolate Brownie
Preheat your oven to 350°F (175°C). Melt the dark chocolate and butter together in a double boiler. Once melted, remove from heat and add sugar, mixing well. Add eggs one at a time, stirring well after each addition. Sift in flour, cocoa powder, and baking powder, mixing until just combined. Pour into a greased cake pan and bake for 25-30 minutes or until a toothpick comes out clean.

Prepare the Ganache
Heat the heavy cream until just simmering. Pour it over the chopped milk chocolate and let sit for a few minutes. Stir until smooth and shiny. Allow to cool slightly.

Assemble the Cake
Slice both chocolate cakes in half horizontally. Place one layer of brownie on a serving plate, spread some caramel sauce on top, then drizzle with ganache. Add a layer of genoise and repeat the process until all layers are stacked.
