    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to resemble fries. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Dry and Fry

    Drain the potatoes and pat them dry thoroughly with a kitchen towel. Heat the vegetable oil in a deep fryer or a large pot to 350°F (175°C). Carefully add the potato strips in batches and fry until golden brown and crispy, about 4-5 minutes.

    Season the Fries

    Using a slotted spoon, remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While the fries are still hot, sprinkle them with salt and black pepper.

    Add Truffle Oil and Toppings

    Drizzle the truffle oil over the hot fries and toss gently to coat. Top with freshly chopped parsley and grated Parmesan cheese before serving.
