Creamy Polenta
Method
Prepare the Lamb Rack
- 1
Season the Lamb
Preheat the oven to 400°F (200°C). In a small bowl, mix together minced garlic, rosemary, thyme, cinnamon, nutmeg, salt, and black pepper. Rub the lamb rack with olive oil and then with the spice mixture.
- 2
Roast the Lamb
Place the lamb rack in a roasting pan and roast in the preheated oven for about 25-30 minutes for medium-rare, or until desired doneness. Let the lamb rest for 10 minutes before slicing.
Prepare the Creamy Polenta
- 3
Cook the Polenta
In a saucepan, bring the broth to a boil. Gradually whisk in the polenta and reduce the heat to low. Cook, stirring frequently, for about 30 minutes until thickened.
- 4
Finish the Polenta
Stir in the heavy cream, grated Parmesan cheese, butter, and salt. Mix until creamy and smooth.
Serve
- 5
Plate the Dish
Slice the lamb rack and serve it alongside the creamy polenta. Drizzle any pan juices over the lamb for added flavor.
