Prepare the Choux Pastry
Preheat the oven to 425°F (220°C). In a saucepan, combine water, butter, and salt. Bring to a boil, then remove from heat and stir in flour until smooth. Add eggs one at a time, mixing until fully incorporated. Pipe small rounds onto a baking sheet and bake for 20-25 minutes until puffed and golden. Let cool.

Make the Chocolate Pastry Cream
In a saucepan, heat milk until hot. In a bowl, whisk together sugar, cocoa powder, cornstarch, and egg yolks. Gradually add hot milk to the egg mixture, stirring continuously. Pour back into the saucepan and cook over medium heat until thickened. Remove from heat, stir in butter and vanilla. Let cool completely.
Chocolate Glaze

Prepare the Chocolate Glaze
In a small saucepan, heat cream until just boiling. Remove from heat and add chocolate chips. Stir until smooth and glossy. Let cool slightly.

Assemble the Profiteroles
Cut the cooled choux pastry in half, fill with chocolate pastry cream, and drizzle with chocolate glaze. Serve immediately or refrigerate until ready to serve.
