Method

Preparing the Chicken

    Prepare the Chicken

    Preheat the oven to 180°C (350°F). Take each chicken breast and gently pound it to an even thickness. Place a slice of prosciutto and a slice of gruyère cheese on each breast, then roll them up tightly and secure with toothpicks.

    Bread the Chicken

    Set up a breading station with one plate for flour, another for beaten eggs, and a third for bread crumbs. Dredge each chicken roll in flour, dip into the eggs, then coat with bread crumbs. Set aside.

    Cook the Chicken

    In a large skillet, heat olive oil over medium heat. Add the chicken rolls and cook until golden brown on all sides. Transfer to a baking dish and finish cooking in the oven for about 15-20 minutes.

Preparing the Beurre Blanc

    Make the Sauce

    In a saucepan, combine white wine and finely chopped shallots, and reduce over medium heat until nearly evaporated. Add heavy cream and reduce again. Remove from heat and whisk in cold butter until emulsified. Season with salt and white pepper.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add mixed vegetables and sauté until tender, about 5-7 minutes. Season with salt to taste.

    Make the Pommes Frites

    Cut the potatoes into fry shapes and soak them in cold water for 30 minutes. Drain and pat dry. Heat oil in a deep fryer or large pot and fry the potatoes until golden brown. Drain on paper towels and season with salt.

Serving

    Plate the Dish

    On a plate, place the chicken rolls, drizzle with beurre blanc, and serve alongside sautéed farm vegetables and pommes frites.
