Preparing the Chicken

Prepare the Chicken
Preheat the oven to 180°C (350°F). Take each chicken breast and gently pound it to an even thickness. Place a slice of prosciutto and a slice of gruyère cheese on each breast, then roll them up tightly and secure with toothpicks.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the chicken rolls and cook until golden brown on all sides. Transfer to a baking dish and finish cooking in the oven for about 15-20 minutes.
Preparing the Beurre Blanc

Make the Sauce
In a saucepan, combine white wine and finely chopped shallots, and reduce over medium heat until nearly evaporated. Add heavy cream and reduce again. Remove from heat and whisk in cold butter until emulsified. Season with salt and white pepper.

On a plate, place the chicken rolls, drizzle with beurre blanc, and serve alongside sautéed farm vegetables and pommes frites.
