Melt the Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

Whip the Egg Yolks

In a separate bowl, whisk the egg yolks with granulated sugar and vanilla extract until pale and thick. Slowly add the melted chocolate mixture while continuously whisking until fully combined.

Beat the Egg Whites

In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Be careful not to overbeat.

Fold Everything Together

Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Chill the Mousse

Transfer the mousse into serving cups or bowls. Cover with plastic wrap and refrigerate for at least 2 hours or until set.

Serve

Once set, serve the mousse chilled. You can garnish with whipped cream, chocolate shavings, or fresh berries if desired.
