Prepare the Potatoes
Peel the Russet potatoes and cut them into thin strips, about 1/4 inch thick.
Make the Roasted Red Pepper Mayo
In a blender, combine the roasted red peppers, mayonnaise, and lemon juice. Blend until smooth and set aside.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Remove the potatoes from the water and pat them dry with paper towels. Fry them in batches in the hot oil until golden brown and crispy, about 5-7 minutes per batch.
Season the Fries
Remove the fries from the oil and drain them on paper towels. While still hot, sprinkle the fries with salt and herbs de Provence.
Serve
Serve the Pommes Frites hot with the roasted red pepper mayo on the side for dipping.
