    Prepare the Ingredients

    Cut the beef tenderloin into 1-inch cubes, slice the mushrooms, chop the onions, and slice the carrots.

    Sear the Meat

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef cubes and sear until browned on all sides. Remove the beef and set aside.

    Sauté the Vegetables

    In the same pot, add onions, carrots, and mushrooms. Sauté until softened, about 5-7 minutes. Add garlic and cook for an additional minute.

    Combine Ingredients

    Return the beef to the pot. Stir in the tomato paste, red wine, beef broth, thyme, and bay leaves. Season with salt and pepper.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.

    Serve

    Remove bay leaves before serving. Serve hot with roasted potatoes on the side.
