Prepare the Ingredients

Preheat the oven to 200°C (400°F). Slice the chorizo into thick rounds. Mince the garlic, chop the red bell pepper, and dice the onion.

Sauté the Vegetables

In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion, minced garlic, and chopped red bell pepper. Sauté until the onion is translucent, about 5 minutes.

Add the Chorizo

Add the sliced chorizo to the skillet and cook for an additional 5-7 minutes until the chorizo is browned and slightly crispy.

Season and Roast

Season the mixture with salt, black pepper, and whole grain mustard. Squeeze the juice of the limes over the top. Toss everything together. Transfer the skillet to the preheated oven and roast for 15-20 minutes.

Serve

Remove the skillet from the oven and gently mix in the mixed greens until just wilted. Serve warm, garnished with lime wedges.
