Prepare the Potatoes

Roast the Potatoes

Preheat the oven to 425°F (220°C). Wash and chop the potatoes into bite-sized cubes. In a bowl, toss them with olive oil, salt, paprika, and black pepper. Spread the potatoes on a baking sheet in a single layer and roast for 25-30 minutes, or until golden and crispy, flipping halfway through.

Make the Spicy Tomato Sauce

Prepare the Sauce

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add crushed tomatoes, red chili flakes, salt, and sugar. Simmer for 10-15 minutes until thickened, stirring occasionally.

Make the Garlic Aioli

Combine Ingredients

In a mixing bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix until smooth. Adjust seasoning if necessary.

Serve

Plate the Dish

Serve the roasted potatoes hot, drizzled with the spicy tomato sauce and a side of garlic aioli for dipping.
