Method

Preparation

Pickle the Green Beans

In a saucepan, combine rice vinegar, water, sugar, and salt. Bring to a boil, then add green beans. Remove from heat and let sit for 30 minutes.

Make the Sundried Tapenade

In a food processor, combine sundried tomatoes, Kalamata olives, capers, garlic, and olive oil. Blend until smooth. Set aside.

Prepare the Egg Mimosa

Hard boil the eggs, then cool and peel. Chop the eggs and mix with mayonnaise, Dijon mustard, and salt. Sprinkle with paprika.

Roast the Tomatoes

Preheat the oven to 200°C (400°F). Toss cherry tomatoes with olive oil, balsamic vinegar, salt, and pepper. Roast for 20 minutes until softened.

Cooking

Cook the Tuna

Season the albacore tuna steaks with sea salt, black pepper, smoked paprika, cumin, and garlic powder. In a skillet, heat olive oil over medium-high heat. Sear the tuna for about 2-3 minutes on each side for medium-rare.

Assembly

Plate the Dish

On a plate, arrange the seared tuna, pickled green beans, roasted tomatoes, sundried tapenade, and egg mimosa. Serve immediately.
