Preparation of Seafood

    Clean the Seafood

    Thoroughly clean the sardines, mussels, octopus, and cockles under cold running water. Remove any shells, guts, or inedible parts.

    Cook the Octopus

    Bring a pot of salted water to a boil. Add the octopus and cook for 30-40 minutes until tender. Let cool and chop into bite-sized pieces.

Canning Process

    Prepare the Jars

    Sterilize glass jars by boiling them in water for 10 minutes. Let them dry completely.

    Fill the Jars

    Layer the sardines, mussels, octopus, and cockles in the sterilized jars. Add a bay leaf and a few black peppercorns to each jar.

    Add Brine

    In a separate bowl, mix the sea salt with water to create a brine. Pour enough brine to cover the seafood in each jar and then drizzle with extra virgin olive oil.

    Seal the Jars

    Seal the jars tightly with their lids. Process them in a water bath for 20-30 minutes to ensure they are properly preserved.
