    Slice the eggplant into long strips, about 1 inch thick. Sprinkle with salt and let sit for 15 minutes to draw out moisture. Rinse and pat dry.

    In a mixing bowl, combine all-purpose flour, cornstarch, salt, pepper, and water. Whisk until smooth.

    In a deep pan, heat vegetable oil over medium-high heat until hot.

    Dip the eggplant strips into the tempura batter, then carefully lower them into the hot oil. Fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.
