Prepare the Tempura Batter

In a bowl, mix together flour, cornstarch, baking powder, and a pinch of salt and pepper. Gradually add cold water, whisking until smooth.

Fry the Pickles

Heat vegetable oil in a deep pan over medium-high heat. Dip pickles into the tempura batter, allowing excess to drip off, then carefully place in the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Onion Rings

Slice the onion into rings. In a separate bowl, mix sriracha sauce with a bit of water to thin it out. Dip onion rings into the sriracha mix, then into the tempura batter before frying in the same oil until crispy, about 3-4 minutes. Drain on paper towels.

Prepare the Sauces

In a small bowl, mix vegan mayonnaise with tonkatsu sauce to create a dipping sauce. Set aside.

Assemble the Dish

On a serving plate, arrange the fried pickles and onion rings. Drizzle BBQ sauce over the top and serve with the vegan mayo-tonkatsu sauce on the side.
